Holy crap am I glad to be off of work! It is the first non rainy day in Winnipeg for what seems like an eternity–I should know as the rainy weather means one thing for me–migraines–and the last few weeks, and especially few days, have been a blur of medication and feeling off my game.
These medications also make for an interesting cross fit class–I felt like I was in a crazy, slow-mo fog at class yesterday. I still managed to smoke the competition in the WOD though–being the first to finish in a time of 6:03 the following circuit of exercises, 3 times in a row:
- Run 200M
- Walking Lunches 60Ft
- 10 Ring Rows
Truthfully, I am amazed I didn’t fall over…I felt incredibly off and fuzzy the entire time. I think the only reason that I was able to finish as strongly as I did was my running background…and maybe it was the drugs…didn’t notice the pain as much. lol.
The one unfortunate thing about the headaches and mass exhaustion related to Calgary was that I caved badly last night, post class, and cheated with an ice cream bar, mac and cheese with cherry coke zero (my typical migraine fall back comfort foods) and a piece of toast with almond butter and jam (note this food was more or less evenly split as dinner before cross fit and snacks after–so this isn’t a massive binge or anything like I have participated in in the past). So not part of paleo, but I just couldn’t overcome the cravings for comfort foods. I am bummed that I couldn’t make it a week without caving, but there is one bright side to this–that being, on my day of traveling in Calgary, I was able to stay paleo, while eating out! I was quite amazed and shocked by it. I did have to skip a meal at an event I was at, but soon found something I could eat and felt better because of making the right choices. I also spent my early afternoon today making apple cinnamon caveman cookies in an effort to quash those cravings with something that falls within the diet rules, but is still snacky. They are decent, great texture for a healthy cookie, but a bit bland in the flavour department. I think I would like to add a little something extra–maybe raisins, even if it increases the sugar content a bit–it would make them that much more enjoyable. The recipe is from OmNomNompaleo. Apple Cinnamon Cave Man Cookies (makes 18 cookies)
- 2 large apples, peeled, cored and cut into eighths (I used Fuji apples.)
- 2 cups blanched, slivered almonds
- 2 teaspoons coconut oil, melted
- 2 teaspoons vanilla extract
- 1 tablespoon of cinnamon
- 1 cup finely shredded unsweetened coconut
- A pinch of kosher salt
- 3 large eggs, lightly beaten
- Preheat the oven to 350 F.
- Shred the apples in a food processor with the shredding disc and measure out two cups.
- Replace the shredding disc with the regular chopping blade and pulse the almonds, cinnamon, coconut oil, and vanilla until they’re coarsely ground.
- Combine the apples, almonds, coconut, and salt in a large bowl and stir to combine. Add the eggs and mix everything evenly.
- Using a 3-tablespoons-sized ice cream scoop (I used a 2Tbsp coffee scoop and added a smidge extra), scoop out the dough and placed each dollop on a parchment lined cookie sheet. Then, flatten each cookie until they’re ½ -inch thick. You’ll need to use two trays to make all your cookies.
- Pop a tray in the oven for about 25-30 minutes, rotating it at the halfway mark. The cookies are done when they’re golden brown with some extra color around the edges. Repeat with the second tray.
- Cool the cookies on a rack for about 20 minutes.
