I like your list. My favorite vegan cookie book is Vegab Cookies Invade Your Cookie Jar. Try that book. The cookies are delicious and they are pretty easy. Also, the ingredients aren’t too difficult to find. They also make an awesome cupcake book.
I just bought both the cupcake book and cookie one you mentioned–in fact, the “Your Order has been Shipped” email just came from Amazon this morning! 🙂 I can’t wait to dive in and test it out.
Pumpkin soup! Yum! I’d go a step further an recommend curry pumpkin soup. It’s easy AND delicious.
